WHICH CARD DO I NEED?
Red: the full red-wine process. Punch-down cues, cap management, malolactic, extended aging.
White: the white-wine process, without the steps reds need and whites don't.
Professional: the same four phases with the steps left blank. For winemakers who already know their sequence and want the structure without the instructions.
One card per batch. Cards are single-use and the batch keeps its card the whole way through, so a five-pack covers five batches. Pick the variant that matches what you're making, or buy a pack of each if you run reds and whites in the same season.
THE SEQUENCE, NOT JUST A CHECKLIST
Anyone can write down four phases. What's on a Recipe Card is the order, the dosage rates, and the cues that tell you when. Wait for the cap to form, check daily. Start punching at one-third sugar reduction. Stop when Brix hits zero.
That's the part a checklist leaves out and the part that's hardest to remember in the moment. It was distilled by a home winemaker with more than a decade of vintages behind him, and the optional steps are marked optional so you can adapt without losing the thread.
BUILT FOR A WET CELLAR
Recipe Cards are vinyl, not paper. They live on the vessel for months, through spills, condensation, punch-downs and sanitizer, and come out at bottling still legible. Write on them with anything water-resistant.
RIDES IN THE TRACKER
Sized to clip into a Compass Tracker, so the plan travels with the wine from the primary fermenter through every racking. Check a step off standing at the carboy instead of going back to a notebook.
THEN IT BECOMES PART OF THE RECORD
Every Recipe Card is a sticker. It keeps its backing while it's clipped in the Tracker, riding along with the wine. When the batch is bottled, you peel it and stick it into the marked area on that batch's Archive Sheet.
The plan you followed ends up permanently attached to the record of what happened, in the same binder, under the same batch number. Nothing to file, nothing to lose, and no way for a card to get separated from its wine.
